Perfect Poolside Popsicles

It's that time of year again. The summer's winding down, and it's time for one last week spent at the pool. Here are a couple popsicle recipes to enjoy poolside! One is kid-friendly, and one is better left for adults.

 

To start off, you’ll need a popsicle mold (like this one!). If you don’t have one around, that’s alright, you can use small plastic cups and popsicle sticks as replacements. Your sticks may not stand as straight this way, but hey, it’ll give your pops a little character! 

 

Kid-friendly recipe: Red pops

  • 2 1/2 cups cubed watermelon
  • 1 cup strawberries
  • 1 cup rasperries
  • 2 tbsp lime juice
  • honey to taste, if desired

 

Mix watermelon, strawberries & raspberries in a blender. Purée until liquified. Add lime juice and honey (if desired for extra sweetness) and blend until well mixed. Pour into molds with popsicle sticks and let freeze for 4 to 5 hours. 

Makes about 10 popsicles

 

 

Adult recipe: Sangria pops

  • 3 cups cubed watermelon
  • 1 1/2 cups rasperries
  • 3/4 cup white wine
  • 1 oz vodka
  • 1 oz simple syrup

 

Mix all ingredients except for 1/2 cup of raspberries in a blender. Purée until liquified. Pour into molds without popsicle sticks, leaving about half an inch of space at the top, and let freeze for 1 hour. Take out of freezer and add set aside raspberries to each popsicle. Add the popsicle sticks and let freeze for 7 more hours. 

Makes about 10 popsicles
