Recipe for Tomato & Goat Cheese Dip

Be careful with this creamy dip—it may start an addiction.  It’s one of our favorite summer recipes! Follow along with the recipe below to try it out for yourself, and don’t forget that you can order locally grown tomatoes in our local market!

 

INGREDIENTS:

  • 1 cup ricotta
  • 1 Tbsp olive oil
  • 8 oz goat cheese
  • 3/4 cup crumbled feta
  • 1 Tbsp minced garlic
  • 1/4 tsp salt
  • Juice of 1/2 a lemon
  • 1/4 cup fresh basil, chopped, plus a few sprigs for garnish
  • 2 cup cherry tomatoes
  • 1 baguette
  • 6-in baking dish

 

INSTRUCTIONS:

  1. Preheat oven to 350°F & grease baking dish
  2. In a large bowl, mix together ricotta, olive oil, goat cheese, feta, garlic, salt, lemon juice, & basil, then stir to incorporate
  3. Once mixture is combined as much as possible, stir in half of tomatoes, then pour mixture into baking dish & top with remaining tomatoes
  4. Bake, uncovered, for 30-40 minutes or until bubbly & slightly browned
  5. While dip is baking, cut baguette into 1/4 inch thick slices & lay out in a single layer on a baking sheet
  6. Drizzle bread slices with olive oil, salt & pepper to taste
  7. Once dip is done baking, preheat your oven to broil & place bread in for 4-5 min, then flip each piece of bread & cook for 4-5 more min
  8. Add a few basil sprigs to the top of the dip for garnish
