Recipes for Radishes

Radishes are one of our favorite root veggies! The crunch and crisp flavor that they add to dishes can't be beat, and there are so many ways to use them. (And even their tops!) These recipes are 4 of our favorites.

 

PICKLED RADISHES

1 cup sliced radishes

2/3 cup rice vinegar

2 tsp brown sugar

1 tsp ginger

1/2 tsp garlic powder

1 tsp salt

 

  • Mix all ingredients in a bowl and set aside to pickle for 20 min before serving

Goes well on salads, noodle bowls, and tacos.

 

 

RADISH CHIPS

1 cup thinly sliced radishes

1/2 tsp garlic powder

olive oil

salt & pepper

 

  • Preheat oven to 375°F degrees
  • Spread radishes out on a greased baking sheet
  • Toss radishes with oil and sprinkle with salt, pepper  & garlic powder
  • Roast for 15—20 min, tossing halfway through

Dip them straight into your favorite hummus!

 

 

 

ROASTED ROOT VEGGIES

3 oz radishes

1 cup diced butternut squash

1 apple

olive oil

1/4 tsp salt

1/4 tsp pepper

 

  • Preheat oven to 425°F
  • Dice radishes into 1/2” cubes
  • Core and dice apple into 1/2” pieces
  • On a baking sheet, toss radishes, apple & butternut squash with 1 Tbsp olive oil, salt & pepper
  • Roast 20—25 min, tossing halfway through

Perfect as a side to roasted chicken or served on top of salad.

 

 

RADISH TOP PESTO

leaves from one bunch of  radishes, about 2 cups

2 garlic cloves, sliced

juice of ½ a lemon

1/4 cup grated parmesan 

1/4 cup olive oil

1/2 tsp salt 

1/2 tsp pepper

2 Tbsp pistachios, walnuts, or pecans

 

  • Mix all ingredients together in a blender until smooth

Use as a salad dressing, pizza topping or pasta sauce.
