Skillet Blueberry Cobbler Recipe

 

It doesn't get any better (or easier) than this! This is a classic warm-weather dessert that you can put together on a whim. Make a homemade batter elevated with a pinch of cinnamon and bright lemon zest, then pour into a buttered skillet. Scatter with an abundance of blueberries then sprinkle with turbinado sugar for a crispy top. Bake to golden goodness then top with a dollop of soft crème fraîche. The perfect for your next cookout or outdoor gathering!

 

INGREDIENTS:

  • 1 cup flour
  • 1/2 cup light brown sugar
  • 1/4 cup granulated sugar
  • 2 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/2 tsp salt
  • 1 lemon
  • 1 cup milk
  • 1 tsp vanilla extract
  • 4 oz butter
  • 12 oz blueberries
  • 2 Tbsp turbinado sugar
  • 1/2 cup crème fraîche

 

INSTRUCTIONS:


1. PREHEAT SKILLET & MAKE BATTER

  • Place a 10” ovenproof skillet in oven & preheat oven to 350ºF 
  • In a large bowl, whisk together flour, brown sugar, granulated sugar, baking powder, cinnamon & salt
  • Zest & juice lemon
  • In another bowl, whisk together milk, vanilla, lemon zest & juice (don’t worry, a little curdling is normal here!)
  • Add wet ingredients to dry ingredients, stirring until just combined


2. MAKE COBBLER

  • Cut butter into small cubes
  • Place butter in the hot skillet, swirling until butter melts (return to oven for 1–2 min if necessary)
  • Pour batter into skillet, spreading to the edges, but do not stir or incorporate the butter
  • Scatter blueberries over the batter and sprinkle with turbinado sugar
  • Bake 30–40 min or until golden brown


3. GARNISH AND GATHER

  • Let cool slightly and enjoy warm or at room temperature dolloped with crème fraîche
