Skillet Blueberry Cobbler Recipe

It doesn't get any better (or easier) than this! This is a classic warm-weather dessert that you can put together on a whim. Make a homemade batter elevated with a pinch of cinnamon and bright lemon zest, then pour into a buttered skillet. Scatter with an abundance of blueberries then sprinkle with turbinado sugar for a crispy top. Bake to golden goodness then top with a dollop of soft crème fraîche. The perfect for your next cookout or outdoor gathering!
INGREDIENTS:
- 1 cup flour
- 1/2 cup light brown sugar
- 1/4 cup granulated sugar
- 2 tsp baking powder
- 1/2 tsp cinnamon
- 1/2 tsp salt
- 1 lemon
- 1 cup milk
- 1 tsp vanilla extract
- 4 oz butter
- 12 oz blueberries
- 2 Tbsp turbinado sugar
- 1/2 cup crème fraîche
INSTRUCTIONS:
1. PREHEAT SKILLET & MAKE BATTER
- Place a 10” ovenproof skillet in oven & preheat oven to 350ºF
- In a large bowl, whisk together flour, brown sugar, granulated sugar, baking powder, cinnamon & salt
- Zest & juice lemon
- In another bowl, whisk together milk, vanilla, lemon zest & juice (don’t worry, a little curdling is normal here!)
- Add wet ingredients to dry ingredients, stirring until just combined
2. MAKE COBBLER
- Cut butter into small cubes
- Place butter in the hot skillet, swirling until butter melts (return to oven for 1–2 min if necessary)
- Pour batter into skillet, spreading to the edges, but do not stir or incorporate the butter
- Scatter blueberries over the batter and sprinkle with turbinado sugar
- Bake 30–40 min or until golden brown
3. GARNISH AND GATHER
- Let cool slightly and enjoy warm or at room temperature dolloped with crème fraîche
